Cooking Steps

Fry the eggplant

  • Cut the eggplant into 5cm batons. Crush or mince the garlic.
  • Heat a drizzle of sunflower oil in a frying pan over medium-high heat and fry the eggplant for 7 - 9 minutes, covered, turning regularly.
  • Add half each of the garlic and the sesame seeds, then fry for 2 - 3 more minutes.
  • Stir in the char siu paste and fry for 1 more minute. Season with pepper.
Make the slaw

  • Quarter the lime.
  • In a bowl, combine the slaw mix with the sesame oil, the mayonnaise and the juice of a quarter lime per person (see Tip).
  • Finely chop some of the scallion greens and set aside to use later as garnish, then cut the rest of the scallions into 3cm cylindrical chunks.

Tip: if you're watching your calorie intake, halve the mayonnaise.

Fry the scallions

  • Heat a light drizzle of sunflower oil in a frying pan over medium-high heat and fry the bao buns for 2 - 3 minutes per side, then remove from the pan.
  • Heat a drizzle of sunflower oil in the same pan and fry the scallions with the rest of the garlic for 4 minutes.
  • Add the ginger paste and fry for 1 more minute. Season with salt and pepper.
Serve

  • Roughly chop the coriander. 
  • Add the rest of the sesame seeds and half of the coriander to the slaw.
  • Fill the bao buns with the eggplant and the scallions. Garnish with the crispy onions, the reserved scallion greens and the rest of the coriander.
  • Serve any remaining lime wedges alongside.
