- Preheat the oven to 220°C.
- Slice the potatoes into thin rounds and transfer to a parchment-lined baking sheet.
- Drizzle with sunflower oil, then season with salt and pepper.
- Roast for 30 - 40 minutes, tossing halfway.
Air Fryer Option: drizzle the potatoes with oil and fry for 15 - 25 minutes at 200°C. Shake halfway and avoid overcrowding the basket.
- Meanwhile, chop the onion.
- Heat a drizzle of olive oil in a frying pan over medium-high heat and fry the onion for 2 - 3 minutes.
- Add the pumpkin, a splash of water and a pinch of salt.
- Cover with the lid and steam for 10 - 15 minutes.
- Pat the fish dry with kitchen paper and then wrap it with the bacon.
- Heat a drizzle of olive oil in a frying pan over medium-high heat.
- Fry the fish for 3 - 4 minutes per side, or until done.
- Season to taste with pepper.
