Cooking Steps

Prepare

  • Boil plenty of water in a pot or saucepan.
  • Cook the linguine for 9 - 11 minutes.
  • Reserve 25ml pasta water per person, then drain and set aside.
Fry the bacon

  • Slice the shallot into half-rings and crush or mince the garlic.
  • Roughly chop the bacon.
  • Heat a drizzle of sunflower oil in a frying pan over medium-high heat. Fry the bacon, the garlic and the shallot for 2 - 3 minutes.
  • Roughly chop the kimchi* in the meatime.

*Take care, this ingredient is spicy! Use as preferred.

Make the salad

  • Add the sambal, the cream, the Korean-style spices, the kimchi and its brine. Simmer for 3 - 4 minutes, or until the linguine is done.
  • Slice the cucumber into crescents
  • In a salad bowl, combine the sesame oil with the soy sauce, the sugar and the white wine vinegar.
  • Add the cucumber and toss well to combine with the dressing.
Serve

  • Transfer the linguine and the pasta water to the sauce, then toss well to combine.
  • Serve the linguine on plates and garnish with the cheese.
  • Serve the salad alongside and garnish with the sesame seeds.
