- Boil plenty of water in a pot with a lid for the kohlrabi (see Tip). Crumble in the stock cube (see pantry for amount).
- Peel the kohlrabi and cut it into coarse cubes. Boil it for 12 - 14 minutes, then drain and set aside, covered.
- Cut the mushrooms into slices. Halve the endive lengthways, but leave the core in place so the leaves do not come loose.
- Heat a drizzle of olive oil in a frying pan over medium heat. Fry the mushrooms, bacon lardons and Italian herbs for 8 - 10 minutes.
Tip: to save time, boil the water in a kettle instead.
- Heat a frying pan without oil over high heat and toast the pecans until golden brown. Remove from the pan and set aside.
- Heat a drizzle of olive oil in the same frying pan with a lid over medium heat. Place the endives face down in the pan and fry for 3 minutes.
- In the meantime, cut the brie into thin slices.
- Turn the endives over, place the brie on top and fry, covered, for 2 - 4 minutes.
- Mash the kohlrabi with a potato masher.
- Add a splash of milk for extra creaminess and mix well.
- Stir the mustard and cream cheese into the mash. Season to taste with salt and pepper.
- Serve the kohlrabi mash on plates.
- Place the fried endives with brie on top and serve the mushrooms and bacon around.
- Garnish with the pecans.
