Voorbereiden

Bereid de bouillon en voeg per persoon 100 ml kokend water toe. Schil de gember en snijd of rasp fijn. Snipper de ui. Verwijder de zaadlijsten van de rode peper en snijd de rode peper fijn. Snijd de wortel in dunne halve plakken. Snijd de champignons in kwarten.

Tip: Let jij op je zoutinname? Gebuik dan zoutarme bouillon of voeg de sojasaus naar smaak toe.

Soep maken

Verhit de helft van de zonnebloemolie in een wok of soeppan. Fruit de gember, ui en rode peper 2 – 3 minuten op middelhoog vuur. Voeg de wortel en de groentemix toe en roerbak 2 minuten. Voeg de bouillon en Vietnamese saus toe en laat 6 – 8 minuten koken. Voeg halverwege de champignons en de noedels toe.

Tip: Let op: de rode peper is pittig! Houd je niet van pittig, of eten er kinderen mee? Gebruik dan naar smaak minder rode peper of houd apart.

Dep ondertussen de schelvisfilet droog met keukenpapier. Verhit de overige zonnebloemolie in een koekenpan en bak de schelvisfilet gaar in 2 – 3 minuten per kant. Breng op smaak met peper en zout.

Tip: De kabeljauw in dit gerecht is rijk aan jodium – een belangrijk mineraal voor de schildklier, stofwisseling en de groei van kinderen.

Breng de soep op smaak met de sojasaus en peper. Verdeel de soep over de soepkommen en serveer de schelvisfilet erop.
