Cooking Steps

Prepare

  • Finely grate the ginger and cut the lime into wedges.
  • In a salad bowl, combine the East Asian-style sauce with the sesame oil, the soy sauce, the ginger and the juice of 1 lime wedge per person.
  • Slice the cucumber into crescents. Use a peeler or cheese slicer to shave the carrot into thin ribbons.
  • Transfer both to the salad bowl and set aside.

Fry the chicken

  • Crush or mince the garlic.
  • Finely chop the scallions and separate the white part from the greens.
  • Heat a drizzle of olive oil in a wok or deep frying pan over medium-high heat. 
  • Fry the chicken with the garlic, the gochujang* and the white part of the scallions for 7 minutes.

*Take care, this ingredient is spicy! Use as preferred.

  • Drain the corn in the meantime. 
  • Deseed the red chili pepper* and slice into thin rings.
  • Transfer the noodles and the corn to the wok, then stir-fry for 1 - 2 minutes.
  • Transfer the stir-fry to the salad bowl and toss well to combine. Season with more soy sauce if preferred.

  • Serve the noodles on plates.
  • Garnish with the chili pepper, the scallion greens and the cashews.
  • Serve the rest of the lime wedges alongside.
