  • Verwarm de oven voor op 220 graden.
  • Was of schil de zoete aardappel en snijd in partjes.
  • Snijd de bloem van de broccoli in roosjes en de steel in blokjes.
  • Snijd van 1 bosui per persoon het groene gedeelte in dunne ringen en bewaar apart ter garnering. Snijd de overige bosui in stukken van 3 cm.

  • Meng in een grote kom de zoete aardappel, broccoli en bosui met 1/2 el olijfolie per persoon, peper en zout. 
  • Verdeel de zoete aardappel en groenten met de vegan vissticks over een bakplaat met bakpapier. Bewaar de kom voor stap 3.
  • Bak 20 - 25 minuten in de oven. Schep halverwege om.  
Toppings bereiden

  • Meng in een kleine kom de zoet-pittige chilisaus met 1 el mayonaise per persoon. 
  • Snijd de verse kruiden fijn.
  • Meng in dezelfde grote kom de zoete aardappel en groenten met de Koreaanse kruiden.

Weetje: Zowel gewone als zoete aardappelen zijn rijk aan vitaminen en mineralen, zoals zink, ijzer, kalium en vitamine B en C. Wist je dat zoete aardappel daarnaast ook veel vitamine A bevat? Goed voor gezonde ogen en een sterk afweersysteem.

  • Verdeel de zoete aardappel en groenten over de borden en serveer de vegan vissticks ernaast.
  • Garneer het gerecht met de cashewstukjes, de verse kruiden en het overige groene gedeelte van de bosui.
  • Serveer met de zoet-pittige chilimayo.
