Cooking Steps

Voorbereiden

Bereid de bouillon. Breng ruim water aan de kook in een pan. Kook de rijst 8 - 9 minuten in de pan. Giet daarna af en laat uitstomen. Snijd een klein deel van het groene gedeelte van de bosui in fijne ringen ter garnering. Snijd de overige bosui in stukken van 2 cm. Rasp de wortel. Pers de knoflook of snijd fijn.

Groenten bakken

Verhit 1/2 el zonnebloemolie in een wok met deksel op middelhoog vuur. Bak de bosui, wortel en knoflook 4 - 6 minuten. Haal uit de pan en bewaar apart. Meng in een kom de bouillon met de wittewijnazijn, vissaus (let op: zout! Gebruik naar smaak), suiker, sojasaus, de helft van de kimchisaus (let op: pittig! Gebruik naar smaak), de helft van de Koreaanse kruiden en sambal naar smaak. 

Broccolini bakken

Verhit 1/2 el zonnebloemolie per persoon in dezelfde wok op hoog vuur. Bak de broccolini 4 - 5 minuten. Blus af met een scheutje water en de overige kimchisaus. Dek de pan af en stoom 4 - 5 minuten. Haal daarna uit de pan en bewaar apart. Snijd ondertussen de koriander fijn.

Vis bakken

Meng in een diep bord 2/3 van het sesamzaad met de overige Koreaanse kruiden. Breng op smaak met peper en zout. Dep de tonijnsteak droog met keukenpapier en wentel door het sesamzaad. Verhit 1/2 el olijfolie per persoon in een koekenpan op middelhoog vuur en bak de tonijnsteak 2 - 3 minuten per kant.

Afmaken

Verhit 1/2 el zonnebloemolie per persoon in dezelfde wok op hoog vuur. Voeg, zodra de olie goed heet is, de rijst en de saus toe. Roer goed door en bak 4 - 5 minuten op hoog vuur. Schep niet te vaak om zodat de rijst goed kan bakken. Voeg de gebakken wortel en bosui toe en meng goed door.

Serveren

Verdeel de gebakken rijst over diepe borden en garneer met het overige groene gedeelte van de bosui en de koriander. Snijd de tonijnsteak in dunne plakken en leg op de rijst. Besprenkel met de sriracha-mayo. Garneer de broccolini met het overige sesamzaad en serveer op een apart bord.
