- Cut the head of the broccoli into florets and dice the stem.
- Crush or mince the garlic.
- Heat a drizzle of olive oil in a large deep frying pan over medium-high heat.
- Stir-fry the broccoli with the garlic for 2 minutes.
- Meanwhile, discard the base of the pak choi, then cut into strips.
- Add the pak choi and a splash of water to the pan, then cook for 3 - 5 minutes over low heat, covered.
- Add the udon noodles and stir-fry for 1 - 2 minutes.
- Add the ginger stir-fry sauce and a third of the teriyaki sauce. Mix well to combine.
- Heat a drizzle of olive oil in a frying pan over medium-high heat.
- Fry the fish on its skin for 2 - 3 minutes, then flip and fry for 1 more minute.
- Top the fish with the rest of the teriyaki sauce and fry for 1 more minute.
- Scatter over half of the sesame seeds.
- To the noodles, add the sesame oil, the sambal, (add more if you'd prefer it to be spicier), the rest of the sesame seeds and some soy sauce as preferred.
- Serve the noodles on deep plates and top with the fish.
- Drizzle with any residual cooking juices and garnish with the peanuts to finish.
