Cooking Steps

Make the sweet potato fries

  • Preheat the oven to 220°C.
  • Wash or peel the sweet potatoes and cut them into 1cm thick fries.
  • Spread the fries over a parchment-lined baking sheet, drizzle lightly with olive oil and season with salt and pepper to taste.
  • Roast the fries for 25 - 30 minutes in the oven.
Prepare the salad

  • Slice the onion into half rings.
  • Cut the lime into wedges.
  • Dice the apple.
  • Grate the carrot. In a salad bowl, mix the carrot, red cabbage and apple with the juice of 1 lime wedge per person and some mayonnaise to taste. Season with salt and pepper to taste.
Fry the onion & tempeh

  • Heat a light drizzle of olive oil in a frying pan over medium-high heat. Once the oil is nice and hot, fry the onion and tempeh with the East Asian-style sauce for 6 - 8 minutes.
  • Put the brioche buns in the oven and bake for 5 minutes.
Serve

  • Cut the bun open, transfer to a plate and spread over some mayonnaise and sambal to taste.
  • Add the tempeh and some of the salad, then top with the crispy fried onions.
  • Serve the sweet potato fries and the rest of the salad to the side.
