Cooking Steps

  • Dice the chicken and transfer to a bowl. Add half of the ketjap and toss well to coat.
  • Slice the cucumber into rounds.
  • In a bowl, combine the white wine vinegar with the sugar. Add the cucumber and toss well to combine, then set aside, stirring occasionally.
  • Slice the onion into half-rings and crush or mince the garlic.
Fry the vegetables

  • Heat a drizzle of sunflower oil in a large deep frying pan over medium-high heat. Fry the onion and the garlic for 1 - 2 minutes.
  • Add the vegetable mix and stir-fry for 5 - 7 minutes.
  • Add the noodles and fry for 2 - 3 more minutes.
  • Add the sambal, the rest of the ketjap and some soy sauce as preferred. Stir-fry for 1 more minute.
Fry the chicken

  • In the meantime, heat a drizzle of sunflower oil in a frying pan over medium-high heat and fry the chicken for 7 minutes.
  • Stir in the peanut sauce and the water for the sauce, then heat for 3 - 5 minutes.
Serve

  • Serve the noodles on plates and drizzle with some soy sauce as preferred.
  • Top with the chicken and the peanut sauce.
  • Garnish with the crispy onions.
  • Serve the quick-pickled cucumber alongside.
