- Take the steak out of the fridge so it can come up to room temperature: do this 30 to 60 minutes before you start cooking to get a more tender result.
- Cut the head of the broccoli into small florets and dice the stem.
- Slice the mushrooms.
- Finely chop the onion and press or mince the garlic.
- Heat a drizzle of olive oil in a frying pan and fry the broccoli for 10 - 14 minutes over medium-high heat.
- Deglaze with 2 tbsp water per person.
- Season with salt and pepper to taste.
Did you know... broccoli is considered a superfood, and for good reason; it's not only high in vitamins B, C and E but also calcium, potassium and iron.
- Heat a drizzle of olive oil in a deep frying pan and fry the mushrooms and onion for 2 - 3 minutes over medium-high heat.
- Add the garlic, Italian herbs, cream, mustard and crumble in the stock cube (see pantry for amounts).
- Bring the sauce to a boil and let it reduce for 8 - 10 minutes over medium-high heat.
- Heat the butter in a frying pan over medium-high heat.
- Once the butter is nice and hot, add the steak to the pan and fry for 1 - 3 minutes on each side, or until cooked to your preference (see Tip).
- Take the steak out of the pan. Season the steak with salt and pepper and cover it with aluminium foil.
Tip: fry the steak for 1 - 2 minutes per side for rare, 2 - 3 minutes per side for medium-rare and 4 - 5 minutes per side for well done.
- Serve the steak onto plates with the broccoli on the side.
- Serve the creamy mushroom sauce over the steak to finish.
