Cooking Steps

Voorbereiden en pasta koken

Kook ruim water met een snuf zout in een pan met deksel. Meng in een kom de helft van de oregano met 1/4 el olijfolie per persoon. Breng op smaak met peper en zout. Marineer hierin de vis en laat staan tot gebruik. Snijd de ui in halve ringen. Pers de knoflook of snijd fijn. Kook de pasta, afgedekt, 10 - 12 minuten in de pan met deksel. Schep wat van het kookvocht uit de pan en houd apart. Giet daarna af en laat zonder deksel uitstomen.

Saus maken

Verhit 1/4 el olijfolie per persoon in een grote hapjespan met deksel op middelhoog vuur. Fruit de ui en de knoflook 1 - 2 minuten. Voeg de cherrytomaten en overige oregano toe. Scheur de spinazie klein boven de pan. Verkruimel 1/4 groentebouillonblokje per persoon boven de pan en laat het geheel, afgedekt, 3 - 4 minuten pruttelen.

Vis bakken

Verhit 1/4 el olijfolie per persoon in een koekenpan. Bak de gemarineerde vis 4 - 5 minuten rondom, of tot de vis gaar is. Haal ondertussen de saus van het vuur en meng de mascarpone erdoorheen. Voeg de pasta toe aan de saus en meng er nog 1 el kookvocht per persoon doorheen. Breng op smaak met flink wat peper en zout.

Serveren

Duw met een spatel de vis in stukjes in de pan. Meng de vis met de pasta en de saus. Verdeel de pasta over de borden.

Tip: Wist je dat tomaten uit blik bijna net zoveel vitaminen en mineralen bevatten als verse tomaten? Bij elkaar opgeteld bevat dit gerecht 250 gram groente!
