Preheat the oven to 220°C. Slice the cucumber and transfer to a small bowl. Add the white wine vinegar and half of the cane sugar and season to taste with salt, then toss well to combine. Set aside until serving, stirring occasionally so the flavour can sink in.
Boil plenty of water in a pot or saucepan and cook the rice for 12 - 15 minutes, then drain and set aside. Mix the hoisin, sweet chilli sauce, the rest of the cane sugar, soy sauce, and a drizzle of sunflower oil. Pat the chicken dry with kitchen paper.
Place the chicken in an oven dish. Apply the marinade to the chicken and cover with aluminium foil. Roast in the oven for 15 minutes. Remove the aluminium foil and roast for another 20 minutes or until the chicken is done.
Health Tip: This meal is high in calories. If you're watching your calorie intake, use just half of the quantities specified to make the sauce.
In the meantime, discard the tips of the green beans, finely dice the onion and crush or mince the garlic. Heat a drizzle of sunflower oil in a deep frying pan with a lid. Add the onion and the sambal*, and fry for 1 - 2 minutes. Add the green beans and fry for 2 - 3 minutes.
*Take care, this ingredient is spicy! Use as preferred.
Add a splash of water and put the lid on top. Let it steam for 7 - 9 minutes. In the last 2 minutes, add the ginger paste and garlic.
Divide the rice over deep plates, drizzle ketjap to taste over it, and top with the chicken. Serve with the green beans and pickled cucumber.
