Cooking Steps

Voorbereiden
1

Bereid de bouillon in een pan met deksel. Haal de pan van het vuur en voeg de couscous toe. Laat afgedekt 10 minuten wellen. Snijd ondertussen de wortel in dunne reepjes van ongeveer 5 cm lang.

Groenten bakken

Verhit 1/2 el olijfolie per persoon in een koekenpan met deksel op middelhoog vuur en voeg het water toe. Bak de wortel met de broccolini, afgedekt, 7 - 10 minuten. Haal het deksel eraf, roer de honing erdoorheen en bak nog 1 minuut. Breng op smaak met peper en zout. Snijd ondertussen de citroen in 6 partjes. Snijd de peterselie fijn.

Verhit een koekenpan zonder olie op hoog vuur en rooster het amandelschaafsel goudbruin. Haal uit de pan en houd apart. 

Vis bakken

Dep de kabeljauw droog met keukenpapier en wrijf in met peper en zout. Verhit 1/2 el olijfolie per persoon in dezelfde koekenpan op middelhoog vuur. Bak de vis 2 - 3 minuten, draai om en bak 1 - 2 minuten op de andere kant.

Saus maken

Meng in een kom de tahinsaus met het water voor de saus. Meng de helft van de peterselie en het sap van 1 citroenpartje per persoon door de saus. Breng op smaak met peper en zout. Haal de pan met kabeljauw van het vuur en voeg de tahinisaus toe.

Serveren

Roer de Midden-Oosterse kruiden door de couscous en breng op smaak met peper en zout. Serveer de couscous op diepe borden en leg de kabeljauw in de saus hier bovenop. Garneer met de za'atar, het amandelschaafsel en de overige peterselie. Serveer met de overige citroenpartjes.
