Cooking Steps

Prepare

  • Halve and pit the avocado, then remove the skin. Transfer the flesh to a bowl and mash well. Season with salt and pepper.
  • Cut the tomato into slices.
  • Lay each tortilla out flat and make only one cut, starting from the centre and moving up towards the edge of the wrap. It should look like a radius line.
  • Starting left of the cut, add the roast chicken slices to the first quarter of the tortilla.
Fold the wraps

  • Spread the avocado mash on the quarter directly below the chicken.
  • In the next quarter, add the tomato slices. Finally, add the cheese on the top-right quarter.
  • Carefully fold the quarters one by one, starting left of the cut. First, fold the chicken over the quarter below with the avocado mash. 
  • Continue folding over the next quarter with the tomatoes. Lastly, fold over the quarter with the cheese. You should have a folded tortilla triangle. Gently flatten it.
Serve

  • Heat the sunflower oil in a frying pan over medium-high heat.
  • Fry the tortilla triangles for 2 - 3 minutes per side, until the tortillas are golden brown and the cheese has melted. 
  • In the meantime, in a small bowl, mix the sour cream with the Mexican-style spices*.
  • Serve the cheesy triangle wraps on a plate with the sour cream.
