Cooking Steps

  • Boil plenty of water in a saucepan.
  • Carefully transfer the eggs to the water and boil for 8 - 10 minutes.
  • Rinse the eggs under cold water, then remove the shell and cut into quarters.

  • Roughly chop the lettuce and dice the tomato.
  • Halve and pit the avocado. Discard the skin and then dice the flesh.
  • Cut the bacon into strips.
  • Cut the ciabatta into small cubes.

  • Heat a drizzle of olive oil in a frying pan or grill pan over medium-high heat. Fry the chicken for 6 - 8 minutes, then remove from the pan and set aside.
  • Fry the bacon in the same pan for 4 - 5 minutes, then remove from the pan and set aside.
  • Heat a generous drizzle of olive oil in the same pan and fry the ciabatta for 5 - 7 minutes so as to make croutons. Season with salt and pepper to taste.

  • Grate the Parmigiano Reggiano.
  • Transfer the lettuce to a salad bowl along with the dressing and toss well to combine.
  • Serve the lettuce on deep plates and then arrange the tomato, egg, avocado, chicken, Parmigiano Reggiano, bacon and croutons in rows over the lettuce (see Tip).

Tip: in a classic cobb salad the toppings are arranged in rows over the lettuce, but if you prefer to save time you can also mix everything together in a salad bowl.
