- Preheat the oven to 220°C.
- Peel or thoroughly wash the potatoes and halve them.
- Transfer to a bowl and drizzle with olive oil. Season the fries with half of the Hello Buon Appetito and salt and pepper, then toss well to coat.
- Transfer to a parchment-lined baking sheet and bake in the oven for 25 - 30 minutes or until golden-brown, tossing halfway.
- Cut the onion into halve rings.
- Cut the courgette and tomato into 0.5cm thick slices.
- Crush or mince the garlic.
- Cut the lemon into crescents.
- Drizzle one piece of aluminum foil per person with olive oil.
- Divide the garlic, tomato, courgette and onion between the packages and place the fish on top. Sprinkle on the rest of the Hello Buon Appetito and season with salt and pepper.
- Top the fish with a knob of butter.
- Bake the packages open in the oven for 20 - 22 minutes, or until the fish is cooked through.
- Chop the fresh herbs.
- In a bowl, combine the fresh herbs with the creme fraiche. Season with salt and pepper to taste.
