Cooking Steps

Fry the potatoes

  • Heat a drizzle of sunflower oil in a frying pan over medium-high heat. 
  • Fry the potatoes for 12 minutes, seasoning to taste with salt and pepper.
  • Scatter over the cheese and cook for 2 more minutes.
  • Meanwhile, chop the onion and crush or mince the garlic.

  • Heat a drizzle of sunflower oil in a deep frying pan over medium-high heat. Fry the garlic and onion for 2 - 3 minutes
  • Halve and deseed the bell pepper, then grate both this and the courgette.
  • Transfer both to the onion and fry for 3 - 4 minutes, then deglaze with the balsamic vinegar.

Tip: if preferred, you can also dice them instead.

Fry the veggie beef

  • Stir the passata, the sugar and the Italian seasoning into the vegetables. Season with salt and pepper, then simmer until serving.
  • Heat a drizzle of sunflower oil in a frying pan over medium-high heat.
  • Fry the veggie beef with the Sicilian-style herbs for 6 minutes. 
  • Deglaze with a splash of water, then season with salt and pepper.

  • Chop the basil in the meantime.
  • Serve the cheesy potatoes on plates with the sauce alongside. 
  • Top the sauce with the veggie beef and garnish with the basil to finish.
