Cooking Steps

  • Preheat the oven to 200°C. 
  • Cut the sweet potatoes in half. Sprinkle them with a drizzle of olive oil and wrap in aluminium foil. Bake in the oven for 20 minutes.

  • Finely chop the onion into half rings.
  • In a small bowl mix the onion with the white wine vinegar and the sugar. Set aside and mix every once in a while, while preparing the rest of the toppings.
  • Dice the bell pepper. (see Tip)

  • Fry the minced beef for 3 minutes over medium-high heat, separating it as you do so. 
  • In the meantime roughly chop the parsley and drain the corn.

  • Serve the minced meat, bell pepper, grated mozarella, parsley, corn and yogurt dressing in small bowls along with the pickled onion.
  • Top the sweet potato with toppings of your own choice.
