Cooking Steps

Make the batter

  • Thinly slice the scallions, setting some of the greens aside to use as a garnish later.
  • Heat a light drizzle of sunflower oil in a frying pan over medium-high heat and fry the sweetheart cabbage for 2 - 3 minutes.
  • In a large bowl, beat the eggs with the flour and water (see pantry for amounts).
  • Add the panko and scallions to the batter, mix well and season with salt and pepper to taste.
Fry the pancake

  • Remove the sweetheart cabbage from the pan. Add the bacon to the same frying pan, then add the sweetheart cabbage back on top of the bacon. 
  • Turn the heat to low and pour the batter over the bacon and cabbage. (see Tip).
  • Cover with the lid and fry the pancake for 6 - 8 minutes over medium-low heat until the pancake is brown and crispy.

Tip: this pancake is for 2 people. Are you cooking for 4 people? Divide all the ingredients between 2 pans.

Make the salad

  • In the meantime, use a vegetable peeler or cheese slicer to slice the cucumber into thin ribbons.
  • Dice the apple.
  • In a salad bowl, toss the cucumber, apple and edamame with with the ponzu sauce.
  • Season with soy sauce and pepper to taste.

Flip the pancake

  • In a small bowl, make a sweet sauce by combining the Worcestershire sauce and tomato ketchup.
  • Flip the pancake over (see Tip 1).
  • Spread the sweet sauce over the side with the bacon facing up.
  • Fry the pancake on the other side for 2 - 3 more minutes over medium-low heat (see Tip 2).

Tip 1: an easy way to do this is to turn the pancake out onto a plate, then slide it back into the pan.

Tip 2: it's fine if the pancakes are still a little bit soft on the inside.

Make the sauce

  • In a small bowl, mix the mayonnaise with East Asian sauce.
Serve

  • Cut the pancake in half and serve one half per plate.
  • Drizzle the mayonnaise over the pancake halves and garnish with the scallion greens.
  • Serve the salad alongside.
