Voor de samenstelling van de groene currypasta hebben wij ons laten inspireren door de Thaise keuken. De currypasta is gemaakt van onder andere citroengras, limoenblad, groene peper en gember. De bloemkool geeft dit gerecht een Hollandse twist!

Cooking Steps

Kook 500 ml water per persoon in een pan met deksel en kook hierin de rijst, afgedekt, 8 - 10 minuten. Giet daarna af en laat afgedekt nagaren.

Snijd de groenten

Snijd de prei in fijne ringen. Snijd de bloem van de bloemkool in kleine roosjes en snijd de steel klein. Roer de kokosmelk goed door (zie tip).

Bak de varkenshaasblokjes

Verhit de helft van de zonnebloemolie in een wok of hapjespan met deksel en roerbak de varkenshaasblokjes 3 minuten op middelhoog vuur. Breng op smaak met peper en zout. Haal de varkenshaasblokjes uit de pan en bewaar apart.

Verhit de overige zonnebloemolie in de wok of hapjespan met deksel. Voeg de bloemkool toe en roerbak 2 minuten. Voeg de currypasta toe en roerbak nog 30 seconden.

Laat de curry zachtjes koken

Schenk de kokosmelk en 25 ml water per persoon bij de bloemkool. Dek de pan af en laat 10 minuten zachtjes koken. Voeg halverwege de prei toe aan de wok of hapjespan. Breng op smaak met de sojasaus en peper. Voeg de laatste minuut de varkenshaasblokjes toe aan de curry.

Garneer met de cashewnoten

Verdeel de rijst en curry over de borden en garneer met de cashewnoten.
