Verwarm de oven voor op 200 graden. Snijd de onderkant en de bovenkant van de sinaasappel en zet hem op een van de platte kanten rechtop. Snijd vervolgens de schil, inclusief het witte gedeelte, van de sinaasappel en snijd de sinaasappel in plakken. Hak de gepelde pistachenoten grof.

Meng de plakken sinaasappel in een ovenschaal met de bruine basterdsuiker en 1/2 tl gemalen kaneel per persoon. Bak 10 - 12 minuten in de oven. Snijd ondertussen de munt in fijne reepjes. Meng in een kom de crème fraîche met de suiker.

Meng in een beslagkom de American pancakemix en de helft van de melk met een garde. Voeg het ei en de overige melk toe en roer tot een glad beslag. Verhit de roomboter in een koekenpan op middelhoog vuur, laat de pan goed heet worden en bak per persoon 1 flensje.

Verhit ondertussen een andere koekenpan op hoog vuur en rooster de pistachenoten, zonder olie, totdat ze beginnen te geuren. Verdeel de flensjes over de borden en vouw de flensjes tot een driehoek. Serveer met de gekarameliseerde sinaasappelschijfjes, garneer met de crème fraîche en bestrooi met de pistache en munt.
