- Finely chop the onion.
- Slice the Romano pepper into strips.
- Heat a drizzle of olive oil in a large deep frying pan with a lid, then fry the tomato paste and Mexican-style spices for 1 minute over medium-high heat.
- Add the onion and Romano pepper. Season with salt and pepper and fry for 3 - 4 minutes.
- Add the magic mince and fry for 3 minutes over medium heat.
- In the meantime, dice the tomato and mix it with some extra virgin olive oil and salt and pepper in a small bowl.
- Scatter the cheese over the mince, then cover the pan with a lid and let the cheese melt for 2 - 3 minutes.
- Pull 6 lettuce leaves per person off the little gem and put two leaves together to make a lettuce boat.
- Heat the tortillas in the microwave for 1 - 2 minutes at 700 watts (see Tip).
- Cut the lime into wedges.
Tip: if you don't have a microwave, you can also heat a frying pan without oil over medium-high heat and fry the tortillas for 1 - 2 minutes on each side, or until golden brown. Keep warm over low heat until ready to serve.
- Place 1 lettuce boat onto each tortilla.
- Divide the veggies and mince with cheese between the lettuce boats.
- Finish off with the tomato and cream cheese.
- Squeeze out 1 lime wedge per person over the dish.
