Cooking Steps

Prepare

  • Chop the onion and slice the carrot into crescents.
  • Discard the tips of the green beans and then cut in half.
  • Heat a drizzle of olive oil in a soup pot over medium-high heat. Fry the onion, the carrot and the green beans for 2 - 3 minutes.
  • Add the tomato paste, the curry paste and the curry spices, then fry for 1 more minute.
Make the soup

  • Deglaze with the water (see pantry for amount). Bring to the boil and allow to cook for 4 - 6 minutes.
  • In the meantime, cut the lime into 6 wedges.
  • Finely chop the parsley.
  • Add the shrimp to the soup and poach for 1 - 2 minutes.

  • Add the coconut milk, the fish sauce* and half of the parsley, then mix well to combine.
  • Simmer for 2 - 3 minutes, then season to taste with salt and pepper.
  • Squeeze some lime juice as preferred directly into the soup.
  • Meanwhile, roughly chop the peanuts.

*Take care, this ingredient is salty! Add gradually as preferred.

Serve

  • Serve the soup in bowls or deep plates. 
  • Garnish with the peanuts and the rest of the parsley. 
  • Serve the krupuk and any remaining lime wedges alongside.
