Cooking Steps

  • Preheat the oven to 220°C.
  • Transfer the fries to a parchment-lined baking sheet, season with salt and pepper and bake in the oven for 20 minutes or until golden-brown, tossing halfway.
  • Garnish the fries with the grated cheese at the last minute of baking so it can melt.

  • Thinly slice the jalapeño pepper*. Transfer to a small bowl and mix with the white wine vinegar, sugar and a pinch of salt. Set aside until serving, stirring occasionally.
  • Chop the bell pepper into thin strips.
  • Chop the onion into half rings.
  • Drain the corn.

*Take care, this ingredient is spicy! Use as preferred.

  • Heat a drizzle of sunflower oil in a large frying pan over medium-high heat. Fry the bell pepper, onion, and corn for 4 - 6 minutes. Add the Mexican-style spices* and fry for 2 more minutes. Season with salt and pepper.
  • Dice the tomato and add to a bowl, along with a pinch of salt.
  • Chop the coriander and quarter the lime.

*Take care, this ingredient is spicy! Use as preferred.

  • Mix the ground paprika into the sour cream.
  • Serve the fries on plates and let everyone garnish their plate with the fried vegetables, tomato, sour cream, crispy fried onions, pickled jalapeño and coriander.
  • Serve with the lime wedges.
