- Preheat the oven to 220°C.
- Transfer the fries to a parchment-lined baking sheet and season with salt and pepper.
- Bake in the oven for 20 minutes or until golden-brown, tossing halfway.
- Scatter over the cheese during the final minute of cooking time and allow to melt.
- Thinly slice the jalapeño* and transfer to a small bowl.
- Add the white wine vinegar, the sugar and a pinch of salt. Mix well to combine and set aside.
- Cut the bell pepper into thin strips and slice the onion into half rings.
- Drain the corn.
*Take care, this ingredient is spicy! Use as preferred.
- Heat a drizzle of sunflower oil in a large frying pan over medium-high heat. Fry the bell pepper with the onion and the corn for 4 - 6 minutes.
- Add the Mexican-style spices* and fry for 2 more minutes.
- Season to taste with salt and pepper.
- Chop the coriander and cut the lime into wedges.

- Dice the tomato and transfer to a bowl. Season with a pinch of salt.
- Combine the paprika with the sour cream.
- Serve all the elements separately at the table and allow everyone to load their own fries, or plate each portion directly if preferred.
