- Optional: heat the oven to 190°C (see Tip).
- Finely chop the shallot.
- Slice the white part of the scallions.
- Cut the carrot lengthways into thin strips.
Tip: in step 5 you will prepare the tortillas in the microwave, but if preferred you can warm them up in the oven. In that case, wrap them in aluminium foil and put them in the oven for 3 - 5 minutes at 190°C.
- Heat a drizzle of olive oil in a frying pan over medium-high heat.
- Fry the shallot, white part of the scallions and duck (with all of the fat) over low heat for 5 - 6 minutes.
- Cut 1cm off the stem of the broccolini. Cut any thicker pieces of broccolini in half lengthways.
- Heat a drizzle of olive oil in a lidded deep frying pan over medium-high heat. Fry the broccolini and half of the carrot for 2 - 3 minutes. Add a splash of water and cover with the lid (see Tip). Cook for 5 - 8 minutes.
Tip: if you have a gas stove, take the pan off the heat before adding the water.
- Chop the green part of the scallions and cucumber lengthways into thin strips.
- Transfer the chopped sweetheart cabbage to a bowl and mix with the sesame oil, then season with salt and pepper.
Did you know... sweetheart cabbage is an excellent source of calcium, iron and vitamin C, which help keep your bones, teeth and muscles healthy.
- Take the duck out of the pan and pull it apart with 2 forks.
- Put the duck back in the pan to keep warm.
- Remove the lid from the pan with the broccolini and carrot.
- Peel the garlic, then grate it over the broccolini and carrot and fry over high heat for 30 seconds. Add some salt and pepper to taste.
- Put the tortillas on a plate and warm them up in the microwave for 30 seconds at 700W.
- Mix the East Asian-style sauce with the hoisin sauce in a small bowl.
- Fill each tortilla with the duck, cucumber and the rest of the carrot.
- Drizzle the sweet hoisin sauce over the tortillas.
- Garnish with the scallions.
- Serve with the broccolini, carrot and sweetheart cabbage.
