Prepare

  • Boil plenty of salted water in a pot or saucepan.
  • Halve the baby potatoes, then boil for 13 - 15 minutes, or until done.
  • Cut the head of the broccoli into florets and dice the stem.
  • Crush or mince the garlic.

Fry the vegetables

  • Heat a drizzle of olive oil in a large frying pan over medium-high heat. Fry the broccoli for 2 minutes.
  • In the meantime, finely chop the scallions. Reserve some of the scallion greens to use later, then add the remaining scallions to the pan and fry together with the broccoli. 
  • Deglaze with the soy sauce and add a splash of water. Cover the pan with the lid and steam the veggies for 3 - 5 minutes.
  • Finely chop the coriander and quarter the lime.
Fry the salmon

  • Heat a light drizzle of olive oil in a frying pan over medium-high heat and fry the salmon filet on the skin for 2 - 3 minutes. Turn the salmon over and fry for 2 minutes on the other side. Season with salt and pepper.
  • Meanwhile, in a bowl, combine the mayonnaise with the juice of 1 lime wedge per person, the coriander, garlic, Korean-style spice mix and sesame seeds.
  • Mix the herb sauce into the potatoes, then season well with salt and pepper.
Serve

  • Add the teriyaki sauce and the reserved scallion greens to the salmon and fry everything together for 1 - 2 minutes, making sure to fully coat the salmon. 
  • Serve the salmon in its sauce on plates, along with the potatoes and broccoli.
  • Garnish the dish with the remaining lime wedges.
