Breng ruim gezouten water aan de kook in een pan met deksel voor de spaghetti. Snijd de paprika in dunne reepjes en de ui in dunne halve ringen. Pers de knoflook of snijd fijn. Laat de tonijn uitlekken en vang de olie op. Verhit de opgevangen olijfolie van de tonijn in een hapjespan en bak de knoflook, ui, paprika en 1 tl gedroogde oregano per persoon 2 - 3 minuten op middelhoog vuur.

Cherrytomaten toevoegen

Kook de spaghetti, afgedekt, in 8 - 10 minuten al dente in de pan met deksel. Giet daarna af, maar bewaar wat van het kookvocht. Voeg ondertussen de cherrytomaten uit blik toe aan de hapjespan met de paprika. Roer goed door en laat 8 - 10 minuten pruttelen. Breng op smaak met peper en zout.

Tip: Wist je dat tomaten uit blik bijna net zoveel vitaminen en mineralen bevatten als verse tomaten? Bij elkaar opgeteld bevat dit gerecht meer dan 250 gram groente, meer vitamine C dan de ADH én is het ook lekker snel klaar.

Saus afmaken

Snijd het basilicum in reepjes. Hak de olijven en kappertjes fijn. Voeg de tonijn, olijven, kappertjes, de helft van het basilicum en per persoon 1 tl zwarte balsamicoazijn en 25 ml kookvocht toe aan de tomatensaus. Roer vervolgens de spaghetti erdoor. Meng goed en voeg eventueel extra kookvocht toe als de spaghetti te droog is.

Verdeel de spaghetti over diepe borden. Garneer met de geraspte Italiaanse kaas en het overige basilicum.
