Cooking Steps

Kook 250 ml water met 1/4 bouillonblokje per persoon in een pan met deksel. Voeg de rijst toe en kook, afgedekt, 12 - 15 minuten. Giet af indien nodig en laat zonder deksel uitstomen. Pers de knoflook of snijd fijn. Laat de zwarte bonen uitlekken in een vergiet en weeg af. Verhit 1/4 el roomboter per persoon in een hapjespan. Voeg de knoflook, ui en paprikareepjes toe en bak 3 - 4 minuten op middelhoog vuur.

Verhit in een koekenpan 1/4 el roomboter per persoon. Leg de gehaktballen in de pan en halveer ze met een spatel. Bak de gehaktballen 3 – 4 minuten rondom bruin. Voeg de zwarte bonen toe aan de pan met paprikareepjes en roerbak 4 - 5 minuten. Voeg vervolgens 1/2 tl van de Mexicaanse kruiden per persoon toe aan dezelfde pan en bak nog 1 minuut.

Snijd de tomaat in blokjes. Snijd de koriander fijn. Meng de tomaat met de helft van de koriander in een kom. Breng op smaak met peper en zout. Was de limoen. Rasp met een fijne rasp de schil van 1/4 limoen per persoon boven de kom met tomaat en koriander. Snijd de limoen vervolgens in parten.

Tip: Hou je niet van koriander? Laat het er dan uit en serveer naar wens bij het garneren.

Meng de overige Mexicaanse kruiden door de rijst. Verdeel de rijst vervolgens over kommen of diepe borden. Verdeel de paprika en de zwarte bonen over de rijst. Leg de gehaktballen ernaast. Serveer met de zure room, de avocadodip, de tomatensalsa en een limoenpartje per persoon. Garneer met de overige koriander.
