Cooking Steps

Roast the potatoes

  • Preheat the oven to 210°C.
  • Thoroughly wash the potatoes and dice them into 2cm cubes. Transfer to a parchment-lined baking sheet and drizzle with olive oil.
  • Season with salt and pepper, then toss well to coat. Roast the potatoes for 25 - 30 minutes.
  • Meanwhile, roughly dice the bell pepper and crush or mince the garlic.
Make the salsa

  • Dice the tomato and mince the onion (see Tip).
  • Roughly chop the coriander. Drain and rinse the beans.
  • In a bowl, combine the tomato with the onion, the coriander and the white wine vinegar.
  • Season to taste with salt and pepper.

Tip: if you don't like raw onion, fry it in the next step instead.

Fry the mince

  • Heat a drizzle of olive oil in a large wok or deep frying pan over medium-high heat and fry the bell pepper for 3 - 4 minutes.
  • Add the garlic and the mince, then fry for 3 more minutes.
  • Add the chipotle paste* and the beans, then cook for 1 more minute.
  • Finally, stir in the potatoes.

*Take care, this ingredient is spicy! Use as preferred.

  • Serve the potato hash on plates and garnish with the tomato salsa. 
  • Drizzle with the yogurt to finish.
