Cooking Steps

Voorbereiden

Breng 150 ml water per persoon aan de kook in een pan met deksel en verkruimel hier per persoon 1/4 groentenbouillonblokje boven. Verwarm de oven voor op 200 graden. Pers de knoflook of snijd fijn. Snijd de rode ui in halve ringen. Snijd de courgette in dunne plakken.

Voeg de bloemkoolrijst en knoflook toe aan de bouillon en kook in 4 - 6 minuten gaar. Giet daarna af en laat zonder deksel uitstomen. Verhit 1/2 el olijfolie per persoon in een koekenpan op middelhoog vuur en bak de ui en de courgette 4 - 6 minuten.

Tip: Bloemkool is rijk aan calcium voor sterke botten en tanden, vitamine C voor de weerstand, kalium voor een gezonde bloeddruk en vezels voor onder andere gezonde darmen.

Snijden

Schil de perzik, verwijder de pit en snijd in blokjes. Ris de blaadjes rozemarijn van het takjes en snijd zeer fijn.

Tip: Perziken bevatten veel vezels, hierdoor dragen ze bij aan een gezonde darmflora en een verzadigd gevoel. Tevens zijn perziken een goede bron van vitamine A en C, en daarom goed voor je ogen en immuunsysteem.

Saus maken

Pureer met een staafmixer in een hoge kom de bloemkoolrijst met de geitenkaas tot een gladde saus. Breng op smaak met peper en zout.

Leg de platbroden op een bakplaat met bakpapier en besmeer met de bloemkool-geitenkaassaus. Beleg met de ui, courgette en perzik. Besprenkel met rozemarijn en bak 6 - 10 minuten in de oven.

Garneer met de rucola en beprenkel de pizza bianco met extra vierge olijfolie naar smaak. Snijd in pizzapunten en verdeel over de borden.
