Snijd de groenten

Schil de gember en snijd fijn. Verwijder de zaadlijsten van de rode peper en snijd fijn. Snijd de shiitake klein. Was de paksoi, verwijder de steelaanzet van de paksoi en snijd klein. Hak de krulpeterselie fijn.

Bak de tofu

Verhit de helft van de zonnebloemolie in een wok of hapjespan en roerbak de tofu 3 minuten op hoog vuur. Haal daarna uit de pan en bewaar apart.

Kook 500 ml water per persoon in een pan met deksel en kook hierin de noedels, afgedekt, 3 minuten. Giet daarna af en spoel af onder koud water.

Verhit ondertussen de overige zonnebloemolie in de wok of hapjespan en roerbak de gember en rode peper 1 minuut op middelmatig vuur. Voeg de shiitake en paksoi toe en roerbak 4 minuten op hoog vuur. Voeg na 2 minuten de sojasaus, bruine suiker en witte wijnazijn toe.

Meng de noedels met de groenten en tofu

Voeg de tofu, het grootste deel van de kokosrasp en de helft van de cashewnoten toe aan de wok of hapjespan. Voeg daarna de noedels toe en verhit 1 minuut.

Garneer met kokosrasp, cashewnoten en krulpeterselie

Verdeel het gerecht over de borden en garneer met de overige kokosrasp, cashewnoten en de krulpeterselie. Voeg naar smaak peper en zout toe.
