Voorbereiden

Bereid een bouillon van per persoon: 3/4 paddenstoelenbouillonblokje en 500 ml kokend water. Schil de gember en rasp of snijd fijn. Pers de knoflook of snijd fijn. Giet de mais af. Halveer de wortel in de lengte en snijd de wortel in dunne halve maantjes. Snijd de spitskool in dunne repen. Snijd de bosui in fijne ringen en bewaar het witte en groene gedeelte apart van elkaar.

Tip: Let jij op je zoutinname? Gebruik dan 1/2 bouillonblokje per persoon en de helft van de zoete Aziatische saus.

Breng ruim water aan de kook in een steelpan met deksel, voeg 1 ei per persoon toe en kook het ei in 6 - 8 minuten hard. Spoel af onder koud water. Verhit 1 1/2 el zonnebloemolie per persoon in een wok of soeppan op middelhoog vuur. Fruit de gember, knoflook en het witte deel van de bosui 2 minuten. Voeg de wortel toe en roerbak 1 minuut mee. Voeg de spitskool, zoete Aziatische saus, miso, suiker en de bouillon toe en laat 6 minuten koken.

Dop eventueel de peultjes. Voeg de noedels en peultjes toe aan de soep en kook nog 3 - 4 minuten.Pel ondertussen de eieren en halveer ze. Proef de soep en voeg peper en zout toe naar smaak.

Tip: Sommige peultjes hebben draadjes. Die kun je eenvoudig lostrekken tijdens het snijden van de uiteinden.

Verdeel de miso-ramen met de groenten over de soepkommen. Garneer met de mais, de gehalveerde eieren, gomasio en het groene deel van de bosui.
