Verwarm de oven voor op 180 graden. Breng ruim water met een snuf zout aan de kook in een pan met deksel voor de rijst. Kook de rijst afgedekt 12 - 15 minuten. Giet daarna af en laat zonder deksel uitstomen.

Laat de mais en kidneybonen uitlekken in een vergiet. Verhit in een hapjespan op middelhoog vuur, zonder olie, de Mexicaanse kruiden 1 minuut of tot ze beginnen te geuren.

Voeg 1/4 el olijfolie per persoon toe aan de hapjespan en bak het gehakt in 3 minuten los. Voeg de mais en kidneybonen toe en verlaag het vuur. Laat 5 - 6 minuten bakken terwijl je de tomaten snijdt.

Snijd de tomaat in kleine blokjes en de limoen in kwarten. Verpak ondertussen de tortilla's in aluminiumfolie en verwarm 2 - 3 minuten in de oven. Weeg de sla af en snijd fijn.

Roer de tomaat, de cheddar en de rijst door het gehaktmengsel. Pers er een kwart limoen per persoon over uit en breng op smaak met peper en zout.

Verspreid de sla over de tortilla's en schep het gehaktmengsel erover. Vouw dicht zoals een burrito. Om het eten makkelijker te maken kan je de burrito in zijn geheel in aluminiumfolie inwikkelen en dan doorsnijden.
