Voorbereiden

Schil de aardappelen en de meiraapjes en snijd beide in grove stukken. Zorg dat de aardappelen en meiraapjes net onder water staan in een pan met deksel, breng afgedekt aan de kook en laat 15 – 18 minuten zachtjes koken. Giet daarna af en laat zonder deksel uitstomen.

Snipper de sjalot. Halveer de champignons en snijd de eventuele grotere champignons in kwarten. Hak de hazelnoten grof.

Varkensworst bakken

Verhit ondertussen 1/2 eetlepel roomboter per persoon in een koekenpan met deksel op middelhoog vuur en bak de varkensworst in 3 – 4 minuten rondom bruin. Dek vervolgens de pan af en bak 8 – 10 minuten op laag vuur. Keer regelmatig om.

Groenten bakken

Verhit ondertussen een andere koekenpan op middelhoog vuur en bak de hazelnoten, zonder olie, goudbruin. Haal uit de pan en bewaar apart. Verhit de olijfolie in dezelfde koekenpan en fruit de sjalot 2 – 3 minuten op middelmatig vuur. Voeg de champignons erbij en roerbak nog 5 – 7 minuten. Breng op smaak met peper en zout.

Op smaak maken

Meng ondertussen in een saladekom de babyspinazie met de extra vierge olijfolie en 1/4 tl wittewijnazijn per persoon. Breng op smaak met peper en zout. Stamp de aardappelen en meiraapjes tot een grove puree, meng met 11/2 el roomboter per persoon en een scheutje melk om het geheel smeuïg te maken. Breng op smaak met peper en zout.

Haal de varkensworst uit de koekenpan en schenk 50 ml water per persoon en 1/8 bouillonblokje per persoon in de pan. Verhit kort tot een jus en voeg eventueel meer water toe als je meer jus wilt. Verdeel de puree over de borden, leg de varkensworstjes ernaast en schenk de jus over de puree. Schep de babyspinazie ernaast en de gebakken champignons op de spinazie. Garneer het hele gerecht met de hazelnoten.
