Cooking Steps

- Verwarm de oven voor op 180 graden.
- Snijd de tomaat in blokjes.
- Snijd de koriander fijn. Snijd de limoen in 6 partjes.
- Meng in een kom de extra vierge olijfolie met de tomaat, koriander en het sap van 2 limoenpartjes. Breng op smaak met peper en zout, en bewaar apart.

- Verhit de olijfolie in een koekenpan en bak de spiegeleieren.
- Leg de tortilla's op een bakplaat met bakpapier.
- Bestrijk de tortilla's met wat water en strooi de helft van de Mexicaanse kruiden (let op: pittig! Gebruik naar smaak) eroverheen.
- Verwarm de tortilla's 2 - 4 minuten in de oven.

- Halveer de avocado en verwijder de schil. Snijd het vruchtvlees in plakjes.
- Leg de plakjes avocado op een bord en bestrooi met de overige Mexicaanse kruiden. Breng op smaak met peper en zout.
- Verkruimel de witte kaas in een kleine kom.

- Serveer de tortilla's op borden.
- Beleg met het gebakken ei, de tomatensalsa, de avocado en de witte kaas.
