Cooking Steps

Prepare

  • Crush or mince the garlic.
  • Cut half of the lime into wedges and juice the rest into a bowl.
  • Add the shrimp, garlic, BBQ spice rub*, and olive oil to the bowl and mix together, then set aside to marinate.
  • Quarter the cherry tomatoes, then peel and dice the mango and add to a separate bowl. Add the white wine vinegar and extra virgin oil, then season with salt and pepper to taste. 

*Take care, this ingredient is spicy! Use as preferred.

  • Thread the shrimp onto skewers. Cut the bread in half, drizzle with olive oil to taste, and toast on medium heat on the BBQ.
  • Grill the shrimp on the BBQ for at least 3 - 4 minutes or until done (see Tip).

Tip: You can also fry the shrimp in a pan with a drizzle of olive oil if preferred.

  • Serve the grilled shrimp on a platter and top with the mango salsa. Add the toasted ciabatta on the side.
  • Serve with the lime wedges and aioli on the side.
