Cooking Steps

Prepare

  • Thinly slice the onion into half rings.
  • Chop the courgette into crescents.
  • Slice the bell pepper into strips.

Did you know... as well as vitamin C, bell peppers are also high in vitamin E. This antioxidant is also found in sunflower oil, wholegrain products, nuts, seeds and green vegetables.

Cook the potatoes

  • Boil plenty of salted water in a pot or saucepan (see Tip).
  • Thoroughly wash the potatoes, then dice them.
  • Boil the potatoes for 12 - 13 minutes, covered, then drain and return to the pot.
  • Stir in the pesto and season to taste with salt and pepper.

Tip: if you have a barbecue, you can use this for the potatoes, vegetables and steak instead.

Fry the steak and vegetables

  • Melt a knob of butter in a frying pan over medium-high heat. When the pan is nice and hot, fry the steak for 1 - 3 minutes per side. Season with pepper, then remove from the pan and set aside to rest under aluminum foil.
  • Heat a drizzle of olive oil in the same pan over medium-high heat and fry the onion, bell pepper and courgette with the Sicilian-style herbs for 6 - 8 minutes. Season with salt and pepper.
Serve

  • Slice the steak against the grain. Serve the steak on plates with the vegetables and pesto potatoes alongside.
  • Serve with mayonnaise as preferred.
