Cooking Steps

Voorbereiden

  • Haal de steak uit de koelkast (zie Tip).
  • Verwarm de oven voor op 180 graden.
  • Pers de knoflook of snijd fijn.

Tip: Het best kun je de biefstuk al een halfuur tot een uur voordat je begint met koken uit de koelkast halen. Dan is de biefstuk ook vanbinnen op temperatuur wanneer je hem bakt en krijg je een malser resultaat.

Aubergine bereiden

  • Snijd de aubergine in plakken van 1 cm.
  • Meng in een grote kom de helft van de knoflook met per persoon: 1 el zwarte balsamicoazijn, 1 1/2 el olijfolie en 1 1/2 tl Italiaanse kruiden.
  • Verdeel de aubergine over een bakplaat met bakpapier en bestrijk beide kanten met de balsamicodressing. Breng op smaak met peper en zout.
  • Bak de aubergine 30 minuten in de oven. Keer halverwege om.

Weetje: Aubergine is een lekkere en veelzijdige groente. Wist je dat hij vol zit met ijzer er vitamine C?

Caprese maken

  • Leg 1/3 van de rucola op een groot bord.
  • Snijd de vleestomaat in plakken en leg op de rucola.
  • Snijd de mozzarella in plakken en verdeel over de tomaat.
  • Scheur het basilicum in stukjes boven de tomaat en mozzarella en besprenkel naar smaak met olijfolie, peper en zout.
Vis bereiden

  • Breng ruim water met een flinke snuf zout aan de kook in een pan met deksel.
  • Leg de vis in een ovenschaal en wrijf in met 1/2 el olijfolie per persoon, peper en zout aan beide kanten. Leg de vis met de huid naar beneden in de schaal.
  • Snijd de citroen in dunne plakjes. Leg 3 citroenplakjes per persoon op de vis en bak 10 minuten onderin de oven.
  • Kook de spaghetti, afgedekt, 10 - 12 minuten in de pan met deksel. Giet daarna af, maar bewaar een kopje kookvocht.
Steak bakken

  • Verhit 1/2 el roomboter per persoon in een koekenpan op middelhoog vuur.
  • Dep de steak droog met keukenpapier en wrijf hem in met peper en zout. Leg, zodra de roomboter goed heet is, de steak voorzichtig in de pan. Bak 1 - 3 minuten per kant goudbruin.
  • Laat minimaal 3 minuten rusten onder aluminiumfolie.
  • Verhit 1 el roomboter per persoon in en wok of hapjespan met deksel op middelhoog vuur. Voeg de spaghetti, de helft van de grana padano, de overige knoflook en per persoon: 2 el kookvocht en 1/2 tl versgemalen zwarte peper toe. Meng alles goed door elkaar, tot de kaas gesmolten is.
Serveren

  • Snijd de steak in plakjes.
  • Verdeel de overige rucola over een groot bord. Leg de steakplakjes bovenop de rucola. Bestrooi met de overige grana padano.
  • Leg de gegrilde aubergines op een groot bord.
  • Serveer de dorade, tagliata di manzo, salade caprese, pasta en de aubergine in het midden van de tafel - Italian style!
