- Boil plenty of salted water in a saucepan for the fusili (See Tip).
- Boil the fusilli for 10 - 12 minutes, then drain, rinse with cold water and set aside.
- Chop the onion into half rings.
Tip: extra quick? use boiled water.
- Heat the butter in a frying pan over medium-high heat. Fry the onion 1 - 2 minutes.
- Add the shrimp and fry for 2 minutes until done. Then add the BBQ-rub seasoning, stir fry for 1 minute, remove from the pan, and set aside.
- Mix a dressing in a salad bowl with the Sicilian spice mix, pesto rosso, balsamic vinegar, extra virgin olive oil, salt and pepper to taste.
- Half the mini Roma tomatoes and mix with the baby spinach, and add to the salad bowl.
- Mix the pasta with the salad well.
- Divide the pasta salad over deep plates.
- Serve the piri piri shrimps on top.
- Crumble the feta on top.
