Verwarm de oven voor op 200 graden. Snijd de rode ui in dunne halve ringen. Meng in een kom per persoon: 1 el rodewijnazijn, 1 tl suiker en een snuf zout. Voeg de rode ui hieraan toe. Zet opzij tot gebruik en schep af en toe om. Was de wortels en snijd de wortels in de lengte in kwarten. Snijd eventuele dikkere wortels in zessen of achten.

Verwarm de roomboter in een grote hapjespan met deksel op middelhoog vuur. Leg de wortelstengels naast elkaar in de pan en bak ze 2 minuten. Voeg 50 ml water per persoon toe en verkruimel 1/8 groentebouillonblokje per persoon boven de pan. Dek de pan af en stoof 12 - 15 minuten op laag vuur.

Rasp ondertussen de gember met een fijne rasp. Kneed in een kom het rundergehakt, de zoete Aziatische saus, de panko, 1/3 van de geraspte gember, peper en zout. Vorm met je handen één burger per persoon. Verhit een koekenpan op middelhoog vuur met 1/4 el zonnebloemolie per persoon. Bak de hamburgers 3 - 4 minuten per kant, of tot ze gaar zijn.

Bak ondertussen de spinaziebroodjes 4 - 5 minuten in de oven. Haal het deksel van de hapjespan met de wortelstengels en giet het eventuele overige vocht af. Voeg de honing en gomasio toe aan de wortels en laat de wortels 1 - 2 minuten glaceren. Breng op smaak met peper en zout.

Tip: Het spinaziebroodje in jouw box is een nieuw product. Speciaal voor ons bevat deze variant minder zout en geen palmolie. Het resultaat is lekker én voedzaam!

Salade maken

Meng de mayonaise in een kleine kom met de overige geraspte gember. Pluk twee bladeren van de botersla per persoon, om op de hamburger te leggen. Snijd de rest van de botersla grof en meng in een saladekom met 1/2 el extra vierge olijfolie per persoon. Breng op smaak met peper en zout.

Tip: Let jij op je calorie-inname? Vervang dan de mayonaise door een yoghurt-mayonaise sausje. Meng 1 tl van de mayonaise met 2 el yoghurt, peper en zout. Net zo lekker en minder calorierijk. Houd je van pittig? Voeg dan ook een beetje sambal toe aan de mayonaise.

Serveren

Snijd het spinaziebroodje doormidden en besmeer beide kanten met de gembermayonaise. Beleg met de apart gehouden botersla, vervolgens de hamburger en tot slot een schep gepekelde rode ui. Bestrooi met een deel van de pinda's. Meng de overige ui en pinda's door de salade en serveer samen met de wortels naast de hamburger.
