Parelcouscous bereiden
1

Breng de bouillon aan de kook in een pan met deksel voor de parelcouscous. Voeg de parelcouscous toe aan de bouillon en kook de parelcouscous, afgedekt, 12 - 14 minuten. Giet de parelcouscous daarna af in een vergiet en spoel kort af onder lauw water.

Snijd ondertussen de courgette in blokjes. Snijd de rode ui in fijne reepjes en snijd de pruimtomaat in blokjes. Verhit de olijfolie in een wok of hapjespan en fruit de rode ui 2 minuten op middelhoog vuur. Voeg de courgette, peper en zout toe en bak 6 - 8 minuten. Voeg de pruimtomaat toe en bak het geheel nog 2 minuten.

Snijd de gerookte kipfilet in reepjes. Snijd het verse basilicum grof. Meng in een grote saladekom de basilicumcrème met per persoon: 1 el witte balsamicoazijn, 1/2 el extra vierge olijfolie, peper en zout.

Meng de rucola, parelcouscous, courgette, pruimtomaat, kipfilet, de helft van het verse basilicum en de zongedroogde tomaten met olie door de dressing. Verdeel de couscoussalade over de borden en garneer met het overige basilicum.
