- Heat a drizzle of sunflower oil in a wok or deep frying pan over medium-high heat and fry the vegetable mix for 6 - 8 minutes.
- Add the Korean spice mix in the last minute and season with salt and pepper.
- Heat a drizzle of sunflower oil in a deep frying pan over medium-high heat and fry the veggie mince for 3 - 4 minutes.
- Then stir in the water (see pantry for amount) and fry for 1 more minute until the water has evaporated.
- Meanwhile, crush or mince the garlic.
- In a bowl, mix the garlic with the tahini, peanut butter, sesame oil, soy sauce (0.5 tbsp pp) and 25ml water per person.
- Add the sauce and the noodles to te veggie mince and fry for 1 more minute.
- Serve the noodles in bowls, top with the vegetables and garish with the peanuts.
