- Heat a drizzle of olive oil in a frying pan or grill pan over medium heat. Press the chicken burgers and fry for 7 - 8 minutes per side or until done.
- Slice the green chili pepper.
- Finely chop the onion.
- Beat the eggs with the aged cheese and green chili pepper in a bowl, then season to taste with salt and pepper.
- Heat a drizzle of olive oil in a frying pan over medium heat and fry three quarters of the onion for 2 minutes, take out of the pan and set aside (See tip).
- Heat a drizzle of olive oil in the frying pan and fry the egg until done. Cut the egg with a spatula in 4 egg buns.
- In a small bowl, combine the mustard with the mayonnaise. Season with salt and pepper to taste.
Tip: the rest of the onion will be used in the salad. If you don't like raw onion, fry all of it.
- Slice the cucumber into crescents and finely chop the dill.
- Slice half of the tomatoes and set aside, then dice the rest into 1cm cubes and transfer to a salad bowl.
- Add the cucumber, the rest of the raw onion and the dill to the salad bowl and crumble in the feta. Toss well.
- Drizzle the salad with extra virgin olive oil as preferred, then season with salt and pepper.
- Spread the mustard mayonnaise over the egg buns and transfer to plates.
- Top with the tomato slices, then add the chicken burger, fried onion and pickles.
- Serve with the salad to the side.
