Cooking Steps

Prepare

  • Preheat the oven to 210°C.
  • Slice the onion into half rings.
  • Dice the bell pepper.
  • Cut the stem off the green chili pepper and roll it in your hands so that the seeds fall out. Finely slice a quarter of the green chili pepper per person into rings.
Fry the mince

  • Heat a light drizzle of olive oil in a frying pan and fry the onion and bell pepper for 3 - 4 minutes over medium-high heat.
  • Grate the carrot and drain the corn in a sieve.
  • Add the minced beef, carrot, corn, BBQ spice rub and half of the chopped green chili pepper.
  • Fry for 3 minutes, stirring the mince so it comes apart. Season with salt and pepper to taste.
Bake the tortillas

  • Spread the minced beef mixture and grated mature cheese over one half of each beetroot tortilla, then fold the tortillas in half and transfer to a parchment-lined baking sheet.
  • Bake the tortillas for 6 - 8 minutes.
  • Cut the lime into 6 wedges.
  • In a small bowl, mix the mayonnaise with the juice of 1 lime wedge each. Season with salt and pepper to taste. 
Serve

  • Serve the beetroot tortillas on plates.
  • Dollop the guacamole over top and drizzle over the lime mayo.
  • Garnish with the rest of the green chili pepper to taste and 2 lime wedges.
