Cooking Steps

Voorbereiden
1

Breng in 2 pannen met deksel ruim water aan de kook voor de aardappelen en de groenten. Verwijder de steelaanzet van de sperziebonen. Snijd de wortel in plakjes. Was of schil de aardappelen en snijd in grove stukken.

Puree maken

Kook de aardappelen met 1/4 bouillonblokje per persoon, afgedekt, in 12 – 15 minuten gaar. Giet daarna af en stamp de aardappelen met een aardappelstamper tot puree. Voeg een scheutje melk en per persoon: 1/2 el roomboter en 1 tl mosterd toe. Breng op smaak met peper en zout.

Groenten koken

Kook de sperziebonen en plakjes wortel afgedekt in 8 – 10 minuten gaar in de andere pan met deksel. Giet af, bewaar ze in de pan en laat zonder deksel uitstomen. Snipper de sjalot en pers de knoflook of snijd fijn.

Burger bakken

Verhit 1/2 el roomboter in een koekenpan op middelhoog vuur. Bak de wildzwijnburger 2 - 3 minuten per kant, of tot hij gaar is. Bak op de helft de sjalot en knoflook mee. Haal de burger uit de pan en houd warm onder aluminiumfolie. Verlaag het vuur en voeg de kookroom en per persoon: 2 el water, 1/2 el rodewijnazijn en 1 tl mosterd toe. Breng aan de kook en laat 2 - 3 minuten indikken. Breng op smaak met peper en zout.

Groenten op smaak brengen

Voeg vlak voor serveren 1/2 el roomboter per persoon en de overige sjalot en knoflook toe aan de pan met sperziebonen en wortel. Verhit nog 1 – 2 minuten. Breng op smaak met peper en zout.

Verdeel de puree en de burger over de borden. Schep de wortel en sperziebonen erbij en serveer met de mosterdroomsaus.
