Cooking Steps

1
  • Bring plenty of water to a boil in a pot or saucepan for the noodles.
  • Crush or mince the garlic. Finely chop the scallions and separate the white part from the greens.
  • Discard the base of the pak choi and finely chop both the leaves and the stems, being sure to keep them separate.
  • Cut the Romano pepper into strips.
2
  • Boil the noodles for 3 - 4 minutes until al dente, then drain and rinse under cold water.
  • In the meantime, in a bowl, combine the pork tenderloin tips with half of the cornflour. Season with salt and pepper.
  • In a large bowl, combine the pak choi leaves, some of the scallion greens, the sesame seeds, a quarter of the soy sauce, the vinegar and sugar.
3
  • Heat the sunflower oil in a wok or deep frying pan over high heat. Sear the pork strips for 1 - 2 minutes.
  • In the meantime, in a tall container, combine the chicken stock, ketchup, the sweet chili sauce, the rest of the cornflour and the rest of the soy sauce.
  • Add the rest of the scallions, the garlic, the white part of the pak choi and the Romano pepper to the wok or deep frying pan and fry for a further 2 - 3 minutes.
4
  • Add the noodles and the sauce to the wok or deep frying pan and lower the heat. Simmer for 2 - 3 minutes, or until the sauce thickens.
  • Divide the noodles over the plates.
  • For the parents: top with the pak choi leaves.

Did you know... scallions are very high in calcium compared to other vegetables, as are kale and pak choi.
