- Preheat the oven to 200°C.
- Heat a drizzle of sunflower oil in a frying pan over medium-high heat and fry the potatoes for 15 minutes until golden-brown.
- Add the Peruvian spice mix in the last minute of frying.
- Slice open the carrot buns, transfer them to a parchment-lined baking sheet cut side up, and bake them in the oven for 4 - 5 minutes.
- Melt the butter in a frying pan over medium-high heat and fry the meatballs for 2 - 3 minutes until evenly browned.
- In the meantime, chop the onion.
- Add the onion and yellow curry spices to the meatballs and fry for 1 - 2 minutes, then add the cooking cream and simmer, covered, for 5 - 6 minutes.
- Meanwhile, chop the cucumber into crescents and the tomato into wedges.
- Chop the coriander and mint.
- Zest the lime and chop into 6 wedges.
- In a bowl combine the cucumber, tomato, extra virgin olive oil, lime zest, the juice of one lime wedge per person and half of the coriander and mint. Season with salt and pepper.
- Top the bun with the meatballs. Serve any leftover sauce with the potatoes.
- Serve the potatoes and the rest of the salad alongside.
- Garnish with the rest of the coriander and mint and serve with the rest of the lime wedges.
