Cooking Steps

Voorbereiden

Verwarm de oven voor op 180 graden. Snijd de prei in dunne ringen. Snijd de wortel in fijne halve maantjes. Verhit 1/2 el roomboter per persoon in een koekenpan op middelhoog vuur. Bak de prei en wortel 4 - 6 minuten, haal uit de koekenpan en leg in een ovenschaal. Snijd ondertussen de ui in fijne halve ringen.

Weetje: De meeste vitaminen en mineralen zitten in het groene deel van de prei. Het bevat veel vitamine B6 - belangrijk voor je spieren én goed voor je immuunsysteem.

Stoven

Verhit opnieuw 1/2 el roomboter per persoon in dezelfde koekenpan op middelmatig vuur en fruit de ui 1 - 2 minuten. Voeg het paprikapoeder toe en bak 1 - 2 minuten mee. Blus de ui af met de kookroom en 1/2 el witte balsamicoazijn per persoon. Roer goed en laat 4 - 5 minuten inkoken. Breng op smaak met peper en zout.

Dep ondertussen de vis droog met keukenpapier en breng op smaak met peper en zout. Snijd de tomaten in partjes. Leg de vis in de ovenschaal en voeg de tomaten toe. Giet de roomsaus eroverheen en bestrooi het geheel met de belegen kaas. Bak het vispannetje 20 - 25 minuten in de oven, of tot de vis gaar is.

Aardappelen koken

Breng ruim water aan de kook in een pan met deksel voor de aardappelen. Schil of was de aardappelen en snijd ze in grove stukken. Kook de aardappelen, afgedekt, in 12 - 15 minuten gaar. Giet af en laat zonder deksel uitstomen.

Puree maken

Stamp de aardappelen met een aardappelstamper tot een puree. Voeg 1/2 el roomboter per persoon en een scheutje melk of kookvocht toe om het smeuïg te maken. Voeg 1 tl mosterd per persoon toe en breng op smaak met peper en zout.

Serveren

Verdeel het vispannetje over de borden en serveer met de aardappelpuree.
